So we have a salsa contest at work tomorrow. I'm shooting for the most original category with some pineapple mango salsa that contains:

- Fresh pineapple
- fresh mango
- red onion
- cilantro
- granny smith apple
- lime juice
- orange juice
- honey
- salt
- adobo
- chipotle peppers

I made it last night so the spices could get all nice and soaked up and this batch has some kick to it. I'm going to try to save a good bit and use it to go with some roasted pork loin on Saturday.

I'm trying to make baked plantain chips too but those fuckers are difficult to work with.

If this would have been for the masochistic salsa crowd it would have been pineapple habenaro salsa. Which reminds me of a quick story...

I worked at a place in Nashville many years ago where one of the sous chef had served on the a Culinary Olympic team (yes there is such a thing) as the spice / pepper expert of the group. He made what he called 'hab poppers' which were little cups made from capped, deseeded and deveined habs and packed them with orange sorbet. They were fucking delicious.

Came in 2nd in the most original category in the salsa contest. I was one vote off. I'll take that as a huge win seeing that a good deal of our shop staff competed and made some really awesome batches.
